HA! HA! April Fool's Day...

So tomorrow morning -
My oldest child will find out he'll be spending the summer at Adventure Getaway CHORE CAMP where he'll be able to attend important camp clinics like, "Wash Dishes:  Learn how to avoid water spots" and "Garden Care:  Weed identification and extraction techniques"...

My 7 year old will only have to sign her name on the dotted line to ADOPT a poor orphaned DOLPHIN

and my sweet 3 year old will be presented a packet of DOUGHNUT SEEDS.  My kids can't get enough sugary treats, so we might as well grow a doughnut garden - right?? 

So funny!  Anxious to see the looks on their faces tomorrow...

You Gotta See These...

When I have the time and $$ I am totally inspired by this plAyRooM.  Although our basement playroom is a different shape and not quite as big, I want to do something like this.  I love the color combo and whimsy of it!  I want a cute, tidy, organized playroom in my house...SOON!

Check out these AMAZING & ANGRY cupcakes.  If you're a fan of Angry Birds - they're perfect!  We'll be creating these for my almost 10 year old's birthday in a few weeks.  He's addicted to Angry Birds and I just love the cupcakes...

Thought these little buckets were BRILLIANT for General Conference.  You fill them with bite-size treats & each time your child hears the "word" during a talk, they can take one.  So smart...  I think I will be using this idea, just might have to simplify it since Conference is in 3 days & I don't own a cricket, silhouette or anything of the likes to do the vinyl words.

YUMMY BBQ!


You gotta try this recipe for BBQ chicken.  It is the BEST!!  I got it from my friend Allison who got it from our other friend Lyndi.  It is easy and soooo delicious!  We could eat it everyday, but are trying to be content with just once a week.  I toast little wheat rolls with French's crispy onions and a little shredded cheese before we add the chicken.  Tomorrow the leftover BBQ chicken will be served on a pizza crust with mozzarella cheese, sliced red onions, pineapple, bacon crumbles, and fresh chopped cilantro.  BBQ doesn't get much better than this!!  Here's the recipe:

BBQ Chicken
6 frozen boneless, skinless chicken breasts
12 oz. BBQ sauce
1/2 c. Italian salad dressing
1/4 c. brown sugar
2 Tbs. Worcestershire sauce

Place frozen chicken breasts in bottom of crock pot {If your chicken breasts are gigantic - like the one's I've recently been getting from Costco -I would only put 4 in}.  In a small bowl whisk together the BBQ sauce, dressing, brown sugar, & Worcestershire sauce.  Pour over chicken.  Cook on LOW for 6-8 hours or HIGH for 3-4 hours.  Shred & enjoy!

Cute Party Favor Idea!

We are starting to plan for my almost 4 year old's birthday PARTY.  It's her "first" friend birthday party & she is SUPER EXCITED to say the least! She has decided it has to be PRINCESS themed party of course!  BUT, she is inviting more boys than girls...  That proved to create a small dilemma!!  So, after much deliberation, we are going to be having a PIRATE and PRINCESS party!  Anyways, I just found the cutest idea for a party favor {here} at Home Made by Jill.  She has the cutest ideas and is so clever!!  Look under her tutorials for the how-to on these fun crayons...  I'll now be on the lookout for PRINCESS and PIRATE themed candy molds!

Wishing For Spring!


Even though today {and the last SEVERAL days} does not feel at all like Spring, I can't help but get excited for Spring and especially Easter when I walk through the stores.  I LOVE Easter!  It's my favorite holiday.  I love everything about it.  I usually try to decorate about one month before an upcoming holiday - so, since Easter is on April 24th this year, I excitedly got out all my Easter/Spring decorations today.  They make me smile - even if it's barely 50 degrees outside, the wind is howling, and the sky is dark shades of grey!

Thought they'd be perfect for the mantle!  The bright Spring colors make me HAPPY!

Bundt Cakes...

Last night was my son's Blue & Gold Banquet for his Cub Scout Pack.  Each scout was assigned to bring a cake.  When I asked him what kind of cake he'd like me to make, he said, "CHOCOLATE!"  So, I decided to make a chocolate bundt cake.  I drizzled a chocolate frosting/glaze over the top of the cake and then added polka-dots by pressing blue and yellow Sixlets into the frosting...  It was a YUMMY cake!  I wish I had a picture of it!!  Anyways, here's the delicious recipe for a yummy chocolate bundt cake:
Triple Chocolate Bliss Cake (from Kraft Food & Family)
1 pkg. chocolate cake mix
1 c. sour cream
1 pkg. (4-serving size) chocolate flavor instant pudding
4 eggs
1/2 c. vegetable oil (I used canola oil)
1/2 c. water

PREHEAT oven to 350 degrees.  Lightly grease 12-cup fluted tube pan or 10-inch tube pan (I used Pam Baking Spray).  Beat all ingredients in large bowl with electric mixer on low speed just until moistened.  Beat on medium speed 2 min., scraping bowl occasionally.  Pour into prepared pan.
BAKE 50 min. to 1 hour or until toothpick near center comes out clean.  Cool 10 min.; loosen from side of pan with knife or metal spatula and gently remove cake.  Cool completely on wire rack.  Place on serving plate. 

Frost with whatever frosting or glaze you'd like!  ENJOY...

Also, at this Pack Meeting, my 9 year old was awarded his BEAR!  Exciting times! In just a few weeks he will turn 10 and join the WEEBLOS.  Boy, how time flies...

Birthday Time!

April is an exciting Birthday month for us!  My spunky little 3 year old turns 4 in just a few weeks and her older brother will be turning 10 just a few days later!  Last week over at eighteen25, they have been celebrating {birthday week} and have some of the cutest ideas...  I love the Birthday Box and the Birthday Subway Art.  Since upcoming birthdays have been on my mind a lot lately, I got super excited about these fabulous ideas.  Thank you girls at eighteen25!! 

The Birthday Box:  Each year you have the b-day child fill out a little questionnaire about themselves...  Then you attach a picture of the child that year, & can add a little message from mom & dad on the back if you want.  Such a great idea!  Wouldn't that be so fun to look back at someday?!  Check out the directions & how-to at eighteen25.

Next St. Patty's Day...

I saw this cute & healthy St. Patty's Day idea on Sisters' Stuff (click on Sisters' Stuff to link to their site).  I thought it was super cute & easy.  I will for sure be putting it together for St. Patrick's Day next year, but thought it would also be cute for a birthday party, or other fun get-together!  Cute, easy, healthy, and YUMMY!  Doesn't get much better than that!!

Gotta Run...

The other night, this sweet little 3 year old was giving me a hug when she told me I was "squishy wishy"!  Sad, but true!  Kids rarely lie...  Well, that was my wake-up call!  I have enjoyed running for the past 6 years & have run several marathons, 1/2 marathons, 10k races, and long distance relay-races.  But, after having my last little baby a few months ago, I've had a hard time getting motivated again.  So, now after being reminded of my "squishy wishy" state, I am ready to get running & fueling my body properly again!  Tanya Boyer of Rocky Mountain Running and Triathlon Magazine shared her Top 5 Pre & Post Run Breakfast Foods.  Here they are with recipes she shared also...

5 Must Have Breakfast Foods for Runners:
#1 Steel Cut Oats
Steel cut oats are whole grain groats, or the inner portion of the oat kernel, which have been cut into 2 or 3 pieces. In contrast to rolled oats, the most common type of oat, steel cut oats have not been rolled so they look like small rice grains. Because of this it takes longer to digest and has a more sustained release of energy into the bloodstream, an important factor for runners. The slower digestion also keeps you feeling full for a longer period of time.
 
A common complaint about steel cut oats is the time it takes to prepare them in the morning. Most runners want a breakfast you can grab and go. So, here is a favorite recipe for oatmeal that you can prepare the night before. On race morning or before a training run, just pop a bowl in the microwave.

Make Ahead Steel Cut Oats
4 cups water
1 cup steel cut oats
¼ tsp salt
Boil the water. Add salt and oatmeal, stir well. Turn OFF the heat, and continue to stir until boiling stops. Cover, and let sit overnight. In the morning, you can divide the oatmeal into 4 individual serving dishes so breakfast is ready for the next four days. Microwave for 2 minutes. Top with strawberries, raspberries, chopped nuts, brown sugar, cinnamon, and/or honey.

#2 Bananas
As boring as a banana may sound or be, they pack a powerful punch. One banana contains about 450 mg of potassium, an electrolyte responsible for keeping your body and fluids in balance.  Bananas are good pre-run, post-run, or for any snack of the day.

Chocolate Peanut Butter Banana Smoothie
¾ cup water
¾ cup skim milk
1 banana
1 scoop chocolate protein powder
1 tbsp peanut butter
Ice
Blend until ice is crushed to the texture of your liking. Add more or less water for a thicker or thinner consistency. Can also add fresh fruit for added nutrients.

#3 Eggs
For most runners, eggs serve better as a post-run breakfast. Egg protein contains all the essential amino acids your muscles need for good recovery.  On the days you eat eggs, limit other sources of cholesterol.

Egg Muffins
4 eggs
1/2 cup skim milk
1 cup grated cheddar cheese
4 green onions, finely chopped
Chopped veggies such as broccoli, red pepper, mushrooms, zucchini
Optional - finely chopped lean ham, ground turkey, or black beans
Preheat oven to 375 degrees. Spray muffin pans with non-stick spray. Whisk all ingredients together; fill muffin cups ¾ full. Bake 30 minutes, or until eggs are set and just slightly browned. Muffins will keep for 4 days in the refrigerator for a quick grab later in the week, and they can be reheated in the microwave.

#4 Sweet Potatoes
Yes, you can have sweet potatoes for breakfast. Because of the long cooking time, a sweet potato may serve better as a post-run breakfast, however, pre-cooked sweet potatoes fare well in the microwave. The tubers are high in energy-supplying carbs, but they are also packed with Vitamin A (700% DV), or beta-carotene, a powerful antioxidant. Vitamin C, potassium, iron, manganese, and copper are also found in sweet potatoes. Most runners probably aren't too watchful of their manganese and copper intake, however, these two minerals are crucial for healthy muscle function. While the orange vegetable is higher on the glycemic index for veggies, for runners this means it is more easily digested and quickly enters the system for energy use or replenishment. In the Potato Breakfast recipe, the Greek yogurt adds protein and slows digestion a bit. If yogurt on a sweet potato just sounds too weird, try pairing with eggs.

Potato Breakfast
1 sweet potato, cooked
¼ cup Greek yogurt
1 tbsp pure maple syrup
2 tbsp chopped walnuts or almonds
Dash of cinnamon
Cut open the sweet potato across the top and mash the flesh. Top with yogurt, syrup, nuts, and cinnamon.

#5 Blueberries
Blueberries get their deep blue color from anthocyanins, a group of antioxidants known to fight disease. Most importantly for runners, this juicy blue fruit protects muscle tissue from free radicals that build up during workouts and lessens the damage to muscle fibers from exercise, thus reducing recovery time.
Frozen blueberries contain just as many nutrients as fresh ones, so you can have blueberries year-round. Eat them alone, on yogurt, whole grain cereal or oatmeal, or in a favorite muffin recipe.

Blueberry Nut Muffins
2 cups whole-grain flour (another must for runners)
1 tsp salt
1/3 cup brown sugar
2 tsp baking powder
½ tsp baking soda
2 eggs, slightly beaten
1 cup skim milk
1/3 cup natural applesauce (no sugar added)
½ cup blueberries
Handful chopped walnuts, pecans, or almonds
Preheat oven to 400 degrees. Fill muffin pans with paper muffin cups. Mix the flour, salt, brown sugar, baking powder, and soda together in a large bowl. In a separate bowl combine the eggs, milk and applesauce. Add wet mixture to dry mixture; stir just until moistened. Fold in fruit and nuts. Fill muffin cups ¾ full. Bake for 20-25 minutes or until golden brown.

Tanya Boyer also shared this advice about whole grains, "Whole grain eaters have less belly fat, higher levels of the good cholesterol, and lower blood sugar levels."

Well, needless to say, I'm starting my new, post-baby, running plan in the morning!!  I'm excited & ready to go.  I'll keep you posted on how it goes!  Gotta RUN...

Perfect For Spring!

These white cake cupcakes with fresh strawberry frosting are sooo yummy!  I think they'd be perfect for an Easter picnic, a Spring birthday party, a bridal or baby shower, or any other special occasion.  They are easy to make and turn out really moist & delicious!!  I don't typically buy Pillsbury brand cake mixes, but if you follow the recipe exactly, the cupcakes and frosting turn out perfect...

Cupcakes:
1 Pillsbury white cake mix
1 c. flour
1 c. sugar
1 c. sour cream
1 1/4 c. water
4 egg whites
1/3 c. oil
Mix together.  Fill cupcake papers 2/3 full and bake @ 325 degrees until lightly brown or the top springs back when touched.

Strawberry Frosting:
1/2 c. whole frozen strawberries, thawed
1 c. unsalted butter, firm & slightly cold
pinch of salt
3 1/2 c. powdered sugar
1/2 tsp. vanilla
Puree the strawberries in food processor then set aside.  Beat together butter and salt, then slowly add the powdered sugar.  Add vanilla and 3 Tbs. strawberry puree.

Happy St. Patrick's Day!

This LUCKY little guy got to try his FIRST "non-cereal" solid today.  I know you're supposed to start with a veggie, but I didn't have any on hand...  So, he got to try applesauce for the first time!  He loved it of course.  He finished the whole container.  Lucky for him, he didn't have to start with something green - like peas or green beans

What Keeps Me Busy!

First Off...

I am the busy mom of 4 busy kids. I am starting this blog as a place to keep track of all the fun ideas I want to try, as a place to keep recipes - ones I've tried and liked, and ones I would like to try, as a place to write about my interests and hobbies, and as a place to journal the fun adventures of our little family! Between all my daily carpooling and meal making, I hope to blog some of the things I find too fabulous to forget! So, here it goes...
